The Science of Play Dough

Playdough is a simple reaction between the starch in the wheat flour swelling and breaking down a little with the warm water to gelatinise and form a dough. Cream of tartar is another name for acid potassium tartrate and this helps to make the mixture stronger and adds a little extra squish. The oil in the mixture acts as a lubricant stopping the mixture from sticking together too much. It makes the mixture smooth instead of sticky. And the salt simply acts as a preservative so it doesn’t get all gross and gooey after just a day or two.
